Whole30 2017 – Days 1-5

5 days of the Whole30 down and my husband and I are going strong!  This week hasn’t been too hard.  I think the novelty of it all and the dream of getting healthier is still strong in our minds.  It doesn’t hurt that I made an effort to eat GOOD this week, not just survive this time of drastic change.  Here’s what I made this week:

Day 1

Breakfast

Baked yam topped with a scrambled egg, bell pepper, red onion & cilantro

Snack

Raw almonds

Lunch

Mixed greens with tuna, onions, carrots, red bell pepper, cilantro and red win vinaigrette

Dinner

Chili Lime Shrimp Skewers with Cilantro Cauliflower Rice and steamed broccoli (see my post HERE about how great this was!)

Snack

Spoonful of almond butter

Day 2

Breakfast

I had a really rushed morning and only made it out the door with what I call Grown Up Ants on a Log which is almond butter mixed with raisins and then use it as a dip for celery sticks.

Lunch

On the same note as the morning, in a flurry of school lunches and braiding hair, I packed a mismatch of leftover Cilantro Cauliflower Rice, cucumber slices and prosciutto wrapped peaches.

Snack

Apple, carrots and guacamole

Dinner

Balsamic Chicken (See original recipe HERE.  I used the marinade for the chicken and didn’t do the vegetables), baked yam and mixed greens topped with roasted tomatoes and red onions and red wine vinaigrette.

Snack

Spoonful of almond butter

Day 3

Breakfast

Scrambles eggs & blueberries

Snack

Raw almonds & green tea

Lunch

Shrimp and roasted vegetable salad

Dinner

Shredded pork (I had shredded some boneless pork chops I cooked in the crock pot a while ago and put in the freezer and seasoned it with the rub from THIS RECIPE minus the sugar) over a yam topped with Mango Salsa

Day 4

Breakfast

Scrambled eggs & oranges

Lunch

Leftover balsamic chicken & veggies over green

Snack

“Banana Split” with almond butter, raisins and cinnamon

Dinner

Meatloaf, Garlic Mashed Potatoes (the first time I did the Whole30 potatoes were a no go, so this was a nice treat!) and peas

Day 5

Breakfast

Scrambled eggs, country potatoes and strawberries

Lunch

Leftover pork and mango salsa over greens

Snack

Almond, sunflower seed and raisin mix

Dinner

Chili Lime Shrimp Skewers (the kids only had a bite of ours earlier in the week and were begging for us to make it for the whole family!), yam and asparagus

Snack

We had movie night at home and since sweets and popcorn were off the table for me, I made another “banana split” for myself
