Stuffed Acorn Squash

I love squash. It’s such a versatile and interesting genre of food. You can make soup, pie, or just roast it and eat it. I had been seeing recipes for stuffed acorn squash and decided to try my hand at my own. I think the presentation is impressive and fun. Come on, a food bowl? Love it!

Stuffed Acorn Squash

1 acorn squash
½ onion chopped
2 cloves garlic minced
1 t fresh minced rosemary, thyme, sage & parsley
½ lb ground pork
½ lb ground beef
Dash of crushed red pepper
1 t salt
¾ t black pepper
Optional: Pumpkin Seed Pesto, Nut Cheese or chopped pecans

Preheat oven to 400 degrees. Cut squash in half and remove seeds. Pierce the flesh of the squash with a fork 4-5 times on each half. Place the squash in a baking dish, cut side up. Bake for 40 minutes, or until the squash is cooked through.
While the squash is cooking, heat a medium-sized pan to medium-high heat. Add the onion, garlic, herbs, pork, beef, red pepper, salt and pepper. Cook until the meat is browned and cooked through.
When squash is cooked, remove from oven and fill each with the meat mixture. If using, top with any of the optional ingredients and place back in the oven for 10 minutes.
Remove from oven, let cool and enjoy!
