Sweet Potato Sausage Cakes

Don’t you just love when inspiration and free time intersect to create that perfect food moment? That’s what happened yesterday morning miraculously. The product: almond-crusted sweet potato sausage goodness. I have to admit, I could have eaten about 3 more servings of this! So good!
Here’s what I did:
Sweet Potato Sausage Cakes
1 Sweet Potato, baked, skinned and mashed
1 cup ground Sausage, cooked
1/2 cup Almond Meal
Salt & Pepper to taste
Coconut oil for frying

Stir together the mashed potato and sausage. Add in the sausage oil or some coconut oil if the potato is a little dry. Salt and pepper. Form into little cakes, about 1 1/2″ in diameter. Place the almond meal into a bowl and roll/pat the cakes into it, covering all sides.
Heat a heavy-bottomed pan over medium-high heat. Put enough oil in to the pan coat the bottom. Carefully (these guys are fragile) place the cakes into the pan. Cook on each side for about 4-5 minutes, until they’re crispy brown.

So simple and yummy!
